The University of Southern Nevada teamed up with Chris Hanmer, executive pastry chef from The Ritz-Carlton, Lake Las Vegas, as guests on MORE on KVVU-TV (FOX-Las Vegas) to continue its effort to spread the word about what treats children, teens and adults with braces should avoid during Halloween. Chef Hanmer offered a very creative and easy idea for a delicious Halloween treat that everyone can enjoy and won’t damage expensive orthodontic appliances. White Chocolate Popcorn
Ingredients
8 oz White Chocolate
Flavoring of your choice (cayenne, five spice, cinnamon, cocoa, expresso, etc.)
Method
- Place the white chocolate in a large bowl and put it over a water bathe set on low heat. Warm the chocolate until it is melted, about 5-10 minutes.
- Prepare a baking dish with ice water.
- When the white chocolate in melted remove from the heat and let sit at room temperature for about 3 minutes.
- Fill a plastic pastry bag with the white chocolate and cut the tip off, do not make the hole at the end to large.
- Plunge the pastry bag into the ice water and give a light squeeze. Repeat, moving a little bit over to make room for the next one.
- Let the “Popcorn” sit in the ice water for about 3 minutes to set all the way.
- Remove the “Popcorn” from the ice and place it on a pan lined with paper towels. Let the “Popcorn sit for about 30 minutes before adding the flavor.
- Place a small amount of the “Popcorn” in a bowl or small bag, add your favorite spice, candy or any other flavor that you like and mix well.
- Can be made 1 week ahead and will last 2 weeks in a air tight container
